1/2 Cup butter softened
1 tspn vanilla
3/4 Cup brown sugar
3/4 Cup granulated sugar
1 cup raisins
1 egg
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 Cups flour (mine is a 1/2 white 1/2 wheat flour mixture)
1 1/2 cups oatmeal ( I used the whole oats)
Cream together butter, vanilla, and sugars. Add raisins and egg, beat until combined. Add dry ingredients mix well. Drop by teaspoonful onto lightly greased baking sheet. If you chill the dough you can roll them into balls and they look nicer. Bake at 350 for 12 minutes. Cool on wire rack.
Syndy's Commentary: I made this recipe up myself by adjusting my Carrot Cake Cookies a bit. They were crunchy on the outside and chewy on the inside, my hubby loves Oatmeal cookies and said these were the best he has ever had!
