Syndy's Carrot Cake Cookies




Carrot Cake Cookies:

1/2 Cup butter
1 tspn vanilla
3/4 Cup brown sugar
3/4 Cup granulated sugar
1 cup shredded carrots (I peeled mine before I shredded them)
1 egg
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp Pumpkin Pie Spice (or substitute 1/2 tspn nutmeg and 1/2 tsp cinnamon)
2 1/2 Cups flour (mine is a 1/2 white 1/2 wheat flour mixture)

Cream together butter, vanilla, and sugars.  Add carrots and egg, beat until combined.  Add dry ingredients mix well.  Drop by teaspoonful onto lightly greased baking sheet.  If you chill the dough you can roll them into balls and they look nicer.  Bake at 350 for 12 minutes.  Cool on wire rack.

For the frosting I used 1 can store bought cream cheese frosting.  Put in a microwave safe bowl and microwave for 20ish seconds until it's melted, dip cooled cookies in.  ENJOY!

Syndy's Commentary:

This was the first recipe that I've done myself.  I've had carrot cookies in the past but these have just the right amount of spice to them they are great.  Cookies come out chewy in the middle and delish!  My daughter doesn't like cream cheese so I left the frosting off of some of them.  They are just as good plain.
