Quick Cinnamon Rolls
2 cup flour
2 tbl white sugar
4 tsp baking powder
1 tsp salt
1/4 c. chilled butter
1c cold milk
1/3 c butter
1 c brown sugar
3 tsp cinnamon
Cream 1/3 c. butter, brown sugar, and cinnamon. Drop 1 tsp into each of 12 greased muffin tins. Reserve remaining mixture.
Combine flour, sugar, baking powder, and salt. Cut in 1/4 c. butter add milk and mix to form a dough.
Turn out on a lightly floured surface and knead 8-10 times. Roll into a rectangle about 1/3 inch thick and 12 inches long. Spread the remaining cinnamon mixture onto dough. Roll up jelly roll style and cut into 12 or so pieces. Place in pan on top of cinnamon mixture. Bake at 400 for 15-20 minutes. If you want frosting mix powdered sugar and milk until pouring consistency and pour over baked rolls.
