Granola (modified from a friends Grandmother's recipe)

 2 cups oats (I used quick oats and they worked great)
 1/2 cup flaked coconut
 1/2 cup coarsely chopped slivered or sliced almonds or chopped peanuts
  1/2 cup honey 
 1/3 cup Coconut oil melted (could also use cooking oil)



 Combine all ingredients.  Put on baking sheet lined with parchment paper.   Bake in a 300 degree oven for 30 to 35 minutes or till lightly browned, stirring after 20 minutes. Remove from oven; immediately turn out onto a large piece of foil. Cool; break into clumps. Cover tightly and store at room temperature for up to 2 weeks. You can also store in freezer.

You could really put anything in this.  All kinds of nuts, seeds, dried fruit (added after cooking).  I added flax seed just about 2 tablespoons.
