Quick Cinnamon Rolls
I recently received the cook book Real Mom Kitchen and I love it. It has tons of great quick ideas for recipes. I have loved making their 45 minute cinnamon rolls and have adapted it to fit my own tastes. HERE is the link to their website and recipe, although after looking at the recipe on the website it's different from the one in my cookbook! and here is mine below:
1 cup + 2 tblspns of warm water
1/3 cup oil
2 tbl yeast
1/4 cup sugar
1/2 tsp salt
1 egg
3 1/2 cups flour
filling:
1/4 cup softened butter
sugar
cinnamon
raisins (optional)
Put Water, yeast, oil, and sugar in a mixer bowl and let sit for 15 minutes until bubbly. Add mixture to your mixer and with a dough hook mix in salt, egg, and flour. Dough should be smooth and a little sticky but still pull away from the sides of the bowl. Roll dough into a 9x13 rectangle, spread with melted butter, cinnamon, and sugar (and raisins if desired). I didn't measure the sugar. Roll up dough starting with long end. Cut into 12-14ish rolls, arrange on a greased baking sheet, let rest for 10 minutes.
Bake at 400 for 10-15 minutes (mine come out perfect at around 13). Cover with your favorite cream cheese icing, or just powdered sugar icing (we use this most cuz I always have the ingredients on hand)
icing:
2 cups powdered sugar
3 tblspn melted butter
1 tsp vanilla
1-3 tblspns of milk
mix together until drizzling consistency

Since posting this recipe I have figured out a few things. At first I was substituting Milk for the water and butter for the oil, but the rolls are more dense when I do this, so water is better and oil is better. I also was using brown sugar instead of sugar for the filling and found that this makes it gritty. Sugar is better!! So I reverted back to the original recipe and it's great.
