This recipe came from a cookbook that my MIL brought me on her last trip called Real Mom Kitchen. It's full of wonderful things to eat and they are very easy recipes that usually include things you may already have at home. They are also usually quick too, which in my book is a MUST! Here's a link to their website.
6 eggs
1 1/2 cups oil
3 cups sugar
1 1/2 tsp vanilla
1 large can pumpkin 29 ounces
3 1/4 cups flour
1 1/2 tsp baking soda
1 tsp cinnamon
1 tsp nutmeg
1 tsp ground ginger
1 tsp all spice
1 1/2 tsp salt
OK, the original recipe only called for cinnamon, but what are pumpkin bars without spice? So I added a whole bunch of others as above, or you could buy pumpkin pie spice and add about a tablespoon. Also the original recipe said to mix eggs, oil, sugar, vanilla, and pumpkin then fold in dry ingredients. This made the batter lumpy, so I mixed all those and added it to the dry mixture in my stand mixer and blended until the lumps were mostly gone and it worked fine!
So. mix eggs, oil, sugar, vanilla pumpkin in a bowl. Mix all other ingredients in another bowl. Add wet to dry and blend until almost all lumps are out. Pour into a greased jelly roll pan (which is a large cookie sheet) bake at 350 for 30-40 minutes.
I baked for 35 both times and it was perfect. Knife in center should come clean when done. I also added cream cheese frosting after they were mostly cool.
WARNING: These are soooo gooood that you will want to eat the whole pan!!!
