I love Mimi's Pain Purdue. It's French toast stuffed with cream cheese and a hint of orange. So I tried to make it on my own and let me tell you I came pretty DANG close.
5-6 Slices of Texas Toast
1 8oz package of cream cheese
1/2 of an orange juiced and zested
1tspn vanilla
1/4 cup of powdered sugar
Beat cream cheese, orange, and vanilla until fluffy. Slowly add powdered sugar (if you add it too fast it will fly all over your kitchen) Make a pocket in the Texas toast by using a knife to slit one side open, do not cut the whole piece in half. Add cream cheese mixture with a spoon and dip in you regular French toast egg mixture. Cook on griddle until done. YUMMO. I served mine with maple syrup but they would be equally good plain, or with buttermilk syrup.
Syndy's Commentary:
As another side note I have since made peach, black berry, and apple stuffed french toast. They were all great. Just used the same cream cheese mixture, minus the orange and add the other stuff. For black berry I added black berry jam, for the peach I added fresh peaches that I made into a filling type syrup. For the apple I used apple pie filling and the cream cheese. They were all GREAT! Next we will try strawberry.
As an update to this recipe, I went to Mimi's when I was in California in March and my Perdue is BETTER!!!

Love Mimi's Pain Perdue. Will have to try this. I think Mimi's cheats and uses orange marmalade.
