Kim's Brownie Mix
6 c. flour
4 tsp baking powder
4 tspn salt
8 c. sugar
1 (8oz) can unsweetened cocoa powder
2 c. vegetable shortening
Sift flour, baking powder, and salt. Add sugar, and cocoa. Blend well. With a pastry blender cut in shortening until mixture resembles cornmeal in texture. I ended up using my hands as I have no pastry cutter! Label with date and contents. Store in a cool, dry place use within 10-12 weeks. Makes about 17 cups of brownie mix.
To make Brownies:
2 eggs
1 tspn vanilla
2 1/2 cups mix
nuts optional
Mix well and put in greased 8 inch pan. For 9x13 double recipe. Bake at 350 for about 20-25 minutes. Great to have on hand for those last minutes pot lucks
